Another dish that makes me nostalgic of home cooked food is this simple algio e olio. As with all the things in my life, this is a slightly different version with smokey canadian bacon and fresh parsley.
Chop the bacon into little 5mm cubes. Heat a pan on medium heat with some olive oil. Once hot, toss the bacon into the pan and render until browned.
Once browned cut the heat and add the minced garlic and parsley.
Boil the salted water and cook the spaghetti for 7-8 minutes at 1200’c, until it’s al dante no one likes over cooked pasta.
Add the spaghetti to the warm pan and toss with salt and pepper and more oil if needed.
