Chicken mushroom filo pie

  • 150g shimeji mushrooms
  • 450g shredded chicken
  • 1/4 onion minced
  • 100g cheddar cheese
  • olive oil
  • half a leek sliced
  • 200g broccoli
  • 2tbs butter
  • 1tbs flour
  • milk
  • 1 egg
  • 1 garlic clove
  • 12 filo pastry sheets

chop the white onions, mushrooms, broccoli and saute. add the leaks and shredded chicken, and garlic. Once all cooked, turn off the heat and let rest.

Make some cheesy bachamel. add the butter in a pan, add flour and cook. Add the milk and whisk until it becomes a cream. add salt, pepper and nutmug, cheese.

Add the cheesy sauce to the chicken and veggies, give it a good stir. add an egg for creaminess.

add 4 layers of filo pastry painting each layer with olive oil. Fill with chicken filling about 8mm thick. add 4 layers of filo, and chicken again. Finish off with the final 4 layers of filo and fold together with a final paint of olive oil.

throw in an oven at 175c and bake for 25 minutes.
