- 1 small cucumber
- 3 cloves garlic
- 15g, a bunch fresh dill
- a few leaves of fresh mint
- 450g greek style yogurt
- juice of 2-3 large lemons
- 1tsp white wine vinegar
- 1tsp olive oil
- sea salt
peel the cucumbers. grate the cucumbers on a cheese grater. place in a bowl and sprinkle with salt, and let it sit for 10-20 minutes to release the water. squeeze the juice out of the cucumber with your hands, paper towel or cheese cloth. Discard the released water, and put the cucumber in a bowl to mix with the yoghurt.
Mince the garlic, dill, and mint.
Combine the olive oil, lemon juice, vinegar, cucumber, dill, garlic, and mint into the yogurt. Stir well, taste and season with salt and or more lemon. Give it one last stir and taste, then set aside in the fridge for the flavors to blend.
