INGREDIENTS/
- 1kg bread flour (high gluten)
- 15g of dried yeast
- 1tsp sea salt
- 1tbs golden sugar
- 4tbs extra virgin olive oil
- 650ml warm water
Sieve the flour and salt onto a large clean surface. First make a mountain of flour, then make a circle hole in the middle. Keep a layer of flour at the base of your well.
In a large bowl, mix the yeast, sugar and olive oil and water. Let sit for a few minutes then pour into the well. Using a fork, gradually bring flour from the outside into your well of liquids and continue to mix. Continue mixing drawing larger amounts of flour into the center. Once it starts to come together, work the rest of the flour together into a large dough ball. Keep your hands dusted with flour and knead the dough until it becomes smooth and springy.
Once the dough has become a ball, place it in a flour coated bowl with a damp cloth ontop and let it rise for an hour, until it has doubled in size.
